Ingrédients

- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 1 cup all-purpose flour
- 2 1/2 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- 3 tablespoons salted butter, melted
Préparation
- Combine all ingredients in a blender and blend for about 10 seconds until smooth.
- Let the batter rest for 10 minutes at room temperature or refrigerate up to 48 hours.
- Heat a crepe pan or nonstick skillet over medium heat and lightly butter the surface.
- Pour about 1/4 cup batter into the pan and swirl to coat the bottom evenly.
- Cook for about 30 seconds until edges turn lightly golden and the surface looks set.
- Flip carefully and cook the second side for about 10 seconds.
- Remove to a plate and repeat with remaining batter.
- Serve warm with sweet or savory fillings.
Notes
- Store cooled crepes in the refrigerator for up to 5 days with parchment between layers.
- Freeze up to 2 months in a freezer-safe bag with parchment between each crepe.
- For savory crepes, reduce sugar to 1 teaspoon, omit vanilla, add 1/4 teaspoon salt and fresh herbs.
