Description

Soft, buttery and versatile homemade French crepes perfect for sweet or savory meals, ready in minutes with simple ingredients.

Ingrédients

ÉCHELLE
  • 1 ¼ cup milk (10 fl oz)
  • 3 large eggs
  • 2 tbsp oil or melted butter
  • 2 tsp sugar (savory) or 3 tbsp sugar (sweet)
  • ½ tsp kosher salt
  • 4 oz all purpose flour (scant 1 cup)
  • 2 tbsp softened butter (for cooking)
  • 1–2 lemons
  • ¼ cup vanilla sugar
  • Whipped cream

Préparation

  1. Place the milk and eggs in a jug or bowl and whisk to combine.
  2. Add the oil or butter and whisk again.
  3. Place the flour, sugar and salt in a large bowl.
  4. Add about ¾–1 cup of the liquid to the dry ingredients and mix gently to form a smooth paste.
  5. Add the remaining liquid and mix to form a smooth, watery batter.
  6. Cover the batter and let it rest for 20–30 minutes or up to overnight.
  7. Preheat a 10-inch non-stick pan over medium heat.
  8. Lightly brush the pan with softened butter.
  9. Stir the batter each time before pouring.
  10. Pour ¼ cup of batter into the pan and swirl to coat the bottom evenly.
  11. Cook until set or lightly browned, then flip and cook briefly on the other side.
  12. Repeat with the remaining batter, stacking crepes as you go.
  13. For lemon-sugar crepes: sprinkle sugar on a crepe, fold into quarters, and serve with lemon slices and whipped cream.

Notes

  1. 4 oz all-purpose flour equals a scant 1 cup.
  2. Resting the batter helps improve texture.
