Description
French Crêpes maison, fines, souples et délicates, parfaites pour un dessert, un goûter ou un brunch.
Ingrédients
ÉCHELLE
- 2 cups (250g) all-purpose flour
- 1/2 tsp salt
- 1 tbsp (12g) white sugar
- 4 large eggs, at room temperature
- 3 tbsp (45g) unsalted butter, melted
- 2 cups + 3 tbsp (500ml) whole milk (or 2%)
- 1 tbsp (15ml) rum (dark or light)
Préparation
- Sift together the flour, salt and sugar in a large mixing bowl and create a well.
- Add the eggs into the well and mix until a thick paste forms.
- Whisk together melted butter, milk and rum in a separate bowl.
- Slowly incorporate the liquid mixture into the batter until smooth and velvety.
- Cover and refrigerate for at least 1 hour or overnight.
- Heat an 8–12 inch nonstick skillet over medium heat.
- Pour 1/3 cup of batter into the pan and swirl to coat evenly.
- Cook 2–3 minutes until bubbles form and underside is golden.
- Flip carefully and cook 1 additional minute.
- Slide onto a plate, cover with a cloth, and repeat until all batter is used.
Notes
- Crêpes are best enjoyed the day they are made.
- When stacked and wrapped properly, they keep up to 3 days in the refrigerator.
