100g almond flour

100g powdered sugar

50g all-purpose flour

90g unsalted butter (for brown butter)

4 egg whites

150g fresh or frozen raspberries

Pinch of salt

1 tsp vanilla extract (optional)

Zest of 1 lemon (optional)
Préparation

Prepare the Brown Butter: Melt the butter in a saucepan over medium heat. Let it cook until golden and nutty, around 5-7 minutes. Remove from heat and let it cool slightly.

Sift Dry Ingredients: In a bowl, sift together almond flour, powdered sugar, all-purpose flour, and a pinch of salt.

Combine Egg Whites: Add egg whites to the dry ingredients. Gently mix to combine.

Incorporate Brown Butter: Pour in the cooled brown butter, stirring gently until smooth.

Fill the Molds: Spoon the batter into financier molds, filling them two-thirds of the way. Place one or two raspberries in each mold.

Bake: Preheat the oven to 180°C (350°F). Bake for 12-15 minutes, until golden and a toothpick inserted comes out clean.

Cool: Let the financiers cool in the molds for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a different flavor, substitute raspberries with other berries like blueberries or strawberries.
You can add lemon zest or a dash of vanilla for extra flavor.
If you don’t have financier molds, muffin tins work just as well.
